How does it go... you can take the tiger out of the jungle...?

Here, the hood has a very different meaning!

I looked up just as that one flew over my head too.
Which part, or all of it?

They call the bonnet the hood here. I don't think either term makes sense. Perhaps it's the hat that the engine wears?

Yep, get the American english/English english/Australiian english thing re hoods and trunks vs bonnets and boots. It was the tigers and jungles with hoods bit. Hoods as in neighbourHOODs or HOODlums as in it's a jungle out there??? Or ???

As I was taught, there's a clear distinction between
bonnet: a covering for one's head (and engines also have heads so); and a
hood: a cloth covering on a pram or a carriage or a cape that can be be pulled up or down.

And therein lies your problem! You're trying to use logic. This is English not Maths... 😸

You can take the tiger out of the jungle but you can't take the jungle out of the tiger.
