I'd like to extend the oil change to 10,000 miles, from the recommended 6,000 miles, on my 2021 Crosstrek Limited. Yeah, I know I'm gonna get a lot of pushback here. Anyone else do this? Any special synthetic (obviously) oil and filter recommended?

First why? Inexpensive oil change yourself, save you from engine trouble in the long run. Engine does run rougher after 6000 miles as physical limitation with oil regardless if you want to keep running it much longer.
It does on mine (small engine usually feels more), usually at idle when I am around 10,000 kms mark. I did go over to 12,000 kms at one point. Starting engine in summer feels like starting the engine in winter months and rough idle.
